Apricot Chicken

Apricot ChickenApricot chicken.

1 whole chicken cut up (or any kind of chicken)
1 cup apricot jam
1 tablespoon apple cider vinegar
3 teaspoons dry mustard
2 tablespoons soy sauce
2 tablespoons olive oil
salt and pepper to taste

(So easy it’s almost cheating!)
Mix all ingredients and pour over chicken in skillet or baking pan.  Bake 30-40 minutes at 350 degrees until golden and bubbly.  Serve with white rice, noodles, or potatoes.

This recipe can also be done in a crock pot.  Double amount of apricot jam, apple cider vinegar, mustard, soy sauce, olive oil, salt, pepper, and add 1 to 2 cups of water to cover chicken.  Cook on high for 4-8 hours until chicken is fully cooked – cooking time will depend on size and amount of chicken.
