Pina Colada Cake

I do not claim rights to this recipe – I found it floating around on Facebook.  I made a few small changes and it has become one of my favorites so I wanted to share!

1 yellow or white cake mix
1 LARGE can crushed pineapple, drained
2-14 oz. cans sweetened condensed milk
8 oz. Whipped Topping
2/3 cup sweetened flake coconut

Prepare cake mix as directed on the back of package.  Mix 1/2 can of pineapple into batter.  Bake according to package directions.

With a fork, poke holes in warm cake at 1-inch intervals.  Pour sweetened condensed milk evenly over cake.  Allow cake to cool.

Spread whipped topping over the cake. Sprinkle with remaining pineapple and coconut.  Refrigerate.

pineapple cakeOptional – For people who really love pineapple, add sliced pineapple to the top of the cake and place maraschino cherries in the center of each ring.
