Golden Thumbprints

½ cup (1 stick) butter
1/3 cup brown sugar
1 egg, separated
½ tsp vanilla
1 cup all-purpose flour
¼ tsp salt
¾ cup finely chopped nuts (optional)
candied cherries, chocolate chips, or topping of your choice.

thumbprint cookiesCream together butter, brown sugar, egg yolk, and vanilla.  Stir in flour and salt.  Roll into 1 inch balls.  Dip into slightly beaten egg white and roll in nuts (optional).  Place on ungreased baking sheet.  Bake at 375 degrees for 5 minutes.  Remove from oven and quickly indent center of each ball with thumb (dough will be hot).  Return to oven and bake for 8 minutes.  Cool on rack.  Fill thumbprint with topping of your choice.  Makes about 2 to 3 dozen.
