Oatmeal No-bake Cookies

This is a quick and easy recipe for cookies.  I can remember eating these cookies as a child … and I still love eating them!!!  I have changed the ingredients a little from the original recipe so I am giving both recipes in this article.

Original Ingredients:
1 stick butter
2 cups sugar
½ cup milk
3 tbsp cocoa (optional)
1 tsp vanilla
3 cups quick-cooking oatmeal
½ cup peanut butter (creamy or chunky)

My Ingredients:
1 stick butter
1 cup sugar
1 cup milk
2 tbsp cocoa (optional)
2 tsp vanilla
3 cups quick-cooking oatmeal
1 cup peanut butter (creamy or chunky)

Mix butter, sugar, milk, and cocoa and bring to a boil for 1 minute.  Remove from heat.  Add vanilla and peanut butter – mix well.   Add oatmeal and mix well.  Spoon the cookie mixture onto wax paper to cool and set up.

If you want chocolate cookies, use the cocoa.  If you want peanut butter cookies, leave out the cocoa.  If you boil the butter/sugar/milk combination too long, the cookies will set up hard.  Once you have made the cookies a few times, you will figure out how firm you like them and how long to boil the combination.
