Million Dollar Salad

I was going through an old recipe book that belonged to my great aunt and found several recipes that had been cut out of newspapers, magazines, and food packages.  This is simple recipe that caught my eye.

Million Dollar Salad

Large pack of small marshmallows
Large can of pineapple chunks – drain juice
8 oz pack of cream cheese – room temp
2 tbsp sugar
1 tbsp mayonnaise
1 small jar maraschino cherries – drain juice
8 oz cool whip

Mix cream cheese, sugar, and mayonnaise.  Add marshmallows, pineapple, and cherries.  Mix well, chill until time to serve.  Add cool whip just before serving.

I like to add one or two tbsp lemon juice when mixing the cream cheese, sugar, and mayonnaise.  It adds a little kick to tone down the sweetness.  Some people like to add 1 to 2 cups of rice (cooked and cooled) to the mixture.
